Swimming rama with tofu. A fine little dish from Thai Away Home, that I know I can replicate with a little effort. Essentially, fried tofu with spinach swimming in peanut sauce, served with brown rice. Very satisfying and I believe quite easy once the peanut sauce is made. I have found a recipe, and this will be this week's food project.

Also, they had baby beets with the tops on them at the farmer's market today, and I am super excited! Steamed beet greens are divine! And baby beets with pears and chevre are not far behind!
